CANFIELD, Ohio - The Mahoning County District Board of Health has been busy the past two days inspecting food vendors at the Canfield Fair.
There are approximately 350 food vendors at the fair this year.
Mahoning County District Board of Health's environmental director Ryan Tekac says the department is responsible for inspecting each food vendor.  They are looking to make sure refrigeration temperatures are 41 degrees or lower.  Hot holding surfaces must be at least 135 degrees.  The Mahoning County District Board of Health is also looking to be sure vendors have clean water coming into their stand and are sending dirty water out lines that empty into a dump station.
"It is important that we are here.  Yesterday, there was about 20,000 people that came through the gate and that is going to increase over time and we want to make sure the public knows that they want to come out and enjoy the fair and have a safe experience while they are enjoying the food," said Tekac.
