Cajun Chicken Alfredo

2 Tbsp. olive oil
1 lb. boneless skinless chicken breast, cut into bite-sized chunks
2 tsp. Cajun seasoning
6 cloves garlic, minced
1 1/2 cups chicken broth
1 cup milk
8 oz. fettuccini pasta, uncooked
1/2 cup grated Parmesan cheese
1/2 tsp. freshly ground black pepper
1/4 tsp. salt
Parsley for garnish


Add oil to a large pot. Place over medium-high heat for two minutes. Add chicken and Cajun seasoning. Cook for 5 minutes, stirring occasionally. Add garlic and cook for 1 minute, stirring often.

Add broth and milk. Add pasta. Cover and bring to a boil, stirring occasionally. Reduce heat to medium-low and let pasta simmer, covered for 8 to 13 minutes. Stir every 3 minutes to prevent sticking. Cook until there is about 1/2-inch liquid in bottom of the pot. Remove pot from heat, stir in cheese, salt, pepper and garnish with parsley.
