Bacon and Blue Cheese Meatloaf
A new twist on meatloaf. The bacon and blue cheese add a great flavor, and it's guy approved!
2 lbs. ground beef
1 onion, chopped
3/4 cup seasoned bread crumbs, or as needed
1/2 lb. bacon, cooked and crumbled
2 eggs
3 tsp. Worcestershire sauce
2 tsp. garlic powder
1 tsp. freshly ground black pepper
1/2 tsp. salt
3/4 cup crumbled blue cheese
2 Tbsp. chopped chives
Preheat oven to 350º.
In a large bowl, combine beef, onion, bread crumbs, bacon, eggs, Worcestershire, garlic powder, pepper and salt. Adjust bread crumbs as needed. Shape into an 8 x 4-inch loaf and place into a 9 x 13-inch baking dish. Bake, uncovered, for 1 1/4 to 1 1/2 hours, or until cooked through.
Meanwhile, combine blue cheese and chives. Pat onto meatloaf and let stand 10 minutes before serving.
