Great Groceries: Flourless Peanut Butter Brownies

Flourless Peanut Butter Brownies

What's really different about these brownies is they are mixed in a food processor and they have no flour or sugar!

6 oz. vanilla Greek yogurt

1/4 cup almond milk

1 egg

1 tsp. vanilla

1/2 cup honey

1/4 tsp. salt

1 tsp. baking powder

1/2 cup unsweetened cocoa powder

1/2 cup old-fashioned rolled oats

3/4 cup creamy peanut butter

Preheat oven to 350º.

Combine yogurt, almond milk, egg, vanilla and honey in a food processor. Add salt, baking powder, cocoa and oats. Blend until mix is smooth and oats are ground up, batter will be thin.

Pour batter into an 8 x 8-inch baking dish coated with nonstick cooking spray. Microwave peanut butter for about 30 seconds. Drop melted peanut butter by spoonfuls onto the batter, swirling gently with a knife to create a marbled effect.

Bake for 20 to 25 minutes or until brownies begin to pull away from the sides of the pan.
