Great Groceries: Apple Cider Muffins

Apple Cider Muffins

1 spice cake mix

1/4 tsp. cinnamon

1/4 tsp. nutmeg

3 eggs

1 2/3 cups apple cider

1 stick butter

1 (8 oz.) package cream cheese, softened

1 tsp. cinnamon

3 Tbsp. apple cider

3 to 4 cups confectioners' sugar

Preheat oven to 350.

In a mixing bowl mix together cake mix, cinnamon, nutmeg eggs and apple cider; mix until smooth. Line muffin tins with cupcake wrappers, fill cupcake wells two-thirds full and bake 19 to 24 minutes or when a toothpick inserted into the center comes out clean. Cool on a wire cooling rack.

Meanwhile, cream together butter and cream cheese. Add cinnamon, cider; slowly add confectioners' sugar as needed. Cream together the cream cheese and butter until fluffy. Spread frosting over cooled cupcakes.
