Great Groceries: Shepherd's Pie

Shepherd's Pie

1 Tbsp. olive oil

3 carrots, diced

1 lb. ground beef

1 large onion, finely diced

1/2 tsp. salt

1 tsp. freshly ground black pepper

1 tsp. dried thyme

1 Tbsp. butter

2 cloves garlic, minced

1 cup frozen peas

2 Tbsp. flour

2 Tbsp. tomato paste

1 cup red wine

2 Tbsp. Worcestershire sauce

1 cup beef broth

5 cups prepared mashed potatoes

1 egg, beaten

1/2 cup grated Parmesan cheese

Preheat oven to 400°.

Saute carrots in the olive oil until starting to get tender.

Add ground beef and onions until cooked through. Season with salt, pepper and thyme. Add butter, garlic and peas, then sprinkle with flour. Add tomato paste, wine and Worcestershire. Bring to a boil and cook for 2 to 3 minutes; add beef broth. Allow to reduce until thick. Season with additional salt and pepper if needed.

Transfer meat mixture to a 9 x 13-inch baking dish coated with nonstick cooking spray. Spread mashed potatoes over top. Brush with egg and sprinkle with Parmesan cheese. Bake for about 20 minutes or until the potatoes are browned on top.
