Balsamic Glazed Salmon

1/2 cup balsamic vinegar
1/4 cup white wine
2 Tbsp. honey
1 Tbsp. Dijon mustard
1 rosemary sprig
1 clove garlic, minced
4 (6 oz.) skinless salmon fillets
1/4 tsp. salt
1/4 tsp. freshly ground black pepper
2 tsp. olive oil

In a medium saucepan combine balsamic vinegar, white wine, honey, mustard, rosemary, and garlic. Heat mixture over medium-high heat and bring to a boil, then reduce heat and simmer for about 10 minutes over medium-low heat until sauce has thickened and reduced to about 1/3 cup. Remove from heat and pour through a fine strainer into a heat proof dish. Set aside.

Season salmon with salt and pepper. Heat oil in a non-stick skillet over medium-high heat. Add salmon fillets and cook for about 3 to 4 minutes. Flip salmon and continue cooking for 2 to 3 minutes. Serve warm with balsamic glaze drizzled overtop. Garnish with finely minced rosemary.
