Strawberry Rhubarb Barbeque Sauce
Ingredients
- 3 cups sliced fresh or frozen rhubarb (about 7 stalks)
- 2 cups fresh strawberries, halved
- 2 to 3 tablespoons olive oil
- 1 medium onion, chopped
- 4 cloves garlic, peeled
- 1 cup packed brown sugar
- 3/4 cup ketchup
- 1/2 cup red wine vinegar
- 1/2 cup bourbon (optional)
- 1/4 cup reduced-sodium soy sauce or tamari
- 1/4 cup honey or agave
- 2 teaspoons garlic powder
- 1 teaspoon crushed red pepper flakes
- 1 teaspoon coarsely ground pepper
Directions
Preheat oven to 425 degrees
Line a baking sheet with a baking sheet. Place strawberries, rhubarb, garlic cloves on sheet and drizzle with olive oil. Roast for 15 minutes.
Transfer roasted items to a food processor and puree until smooth,
Heat a large saucepan over medium-high - add olive oil, onion, and tamari. Sautee until onions are caramelized.
Add Strawberry Rhubarb puree, along with sugar, ketchup, vinegar, bourbon, honey or agave, garlic powder, crushed red pepper flakes, and pepper. Bring mixture to a boil and reduce to low – simmer for 15 minutes stirring occasionally until thickened.
Enjoy refrigerated for a week or sauce can be frozen.

Strawberry Rhubarb Chia Jam
Ingredients
- 2 Cups Rhubarb in ½ -inch slices
- 1/3 Cup Maple Syrup (More to taste)
- 3 Cups Stemmed, Quartered Strawberries
- 1 Tbsp. Chia Seeds
Directions
Combine the rhubarb and maple syrup in a medium saucepan. Place over medium heat and bring to a simmer. Reduce the heat to low and simmer gently until the rhubarb is tender and just starting to break down, about 5 minutes, stirring occasionally.
Stir in the strawberries and simmer until the jam is reduced by about a third, 10 - 15 minutes. The berries should be very soft and falling apart but not completely disintegrated; I like them to hold a bit of a shape in the finished jam.
Stir in the chia seeds and cook 1 minute more. Remove from the heat. Transfer the jam into jars and chill until set, at least a few hours and up to 2 weeks, or freeze for longer storage.
