Strawberry Short Cake 

Serves: 4 Prep Time: 15 Min.  

Ingredients:
1 ½ Lb Fresh Strawberries, Sliced
1 Angel Food Cake 
¼ Cup Sugar 
2 Lemons, juiced
½ Tablespoon Basil Chiffonade 
½ Cup Mascarpone Cheese
2 Tablespoons Heavy Cream
Dash of Vanilla 
 

Directions:
1:  In a blender or food processor, combine 2 Tablespoons sugar, lemon juice, and ½ lb strawberries, and puree. Toss with remaining strawberries. Then, gently mash the strawberries. Refrigerate for at least 1 hours. Adjust with more sugar, if desired.  Fold in the basil.     
2: While the strawberries are resting, cut the angel food cake, and gently grill to caramelize. Whisk mascarpone cheese, sugar, vanilla, and cream until slightly thin.  Assemble the cake by cutting the angel food cake in half, add strawberries in the middle, layer, and finish with the mascarpone cream.
