Blueberry Quinoa Salad


1 cup quinoa, uncooked

1 avocado, chopped

1 cup blueberries

1 cup sweet corn

1/2 cup chopped green onions

1/2 cup Feta cheese

1/2 cup chopped pistachios


1/4 cup cilantro leaves

1/4 cup olive oil

2 Tbsp. lime juice

1/2 jalapeño, seeded

1/4 tsp. garlic powder

1/4 tsp. salt

1/8 tsp. freshly ground black pepper


Cook quinoa according to package directions. Transfer to a large bowl. Add avocado, blueberries, corn, onion, Feta and pistachios.


In a blender, add cilantro, olive oil, lime juice, jalapeño, garlic powder, salt and pepper. Blend until smooth. Pour over salad and toss to combine. Serve at room temperature or cold.
