Great Groceries:  No-Bake Caramel Coconut Cookies

1 package fudge stripe shortbread cookies

1 (11 oz.) package caramel, chopped

3 Tbsp. heavy cream

2 cups shredded coconut, toasted

Melted chocolate for drizzling

Place cookies, stripe-side up, on a baking sheet lined with foil.

In a small saucepan over low heat, add caramel and heavy cream. Heat, stirring often, until smooth. Fold in coconut until combined. Spoon caramel mixture evenly onto each cookie, spreading to cover the entire surface.

Drizzle melted chocolate over the cookies. Let set about 15 to 20 minutes before serving.
