Candy Cane Snowball Cookies

4 sticks butter, softened

1 cup confectioners’ sugar

1 1/2 tsp. vanilla

3 1/2 cups flour

1 cup chopped pecans

8 oz. white candy coating

1/2 cup crushed candy canes

In a large bowl, beat together butter and sugar, until light and fluffy. Mix in vanilla, then gradually beat in flour. Stir in pecans. Cover and refrigerate about 3 to 4 hours.

Preheat oven to 350°.

Remove dough from fridge, shape into 1-inch balls and place on ungreased baking sheets. Bake about 15 minutes. Remove from oven and let cool.

In a small bowl, melt candy coating. In another small bowl, add crushed candy canes. Dip the tops of the cookies into candy coating, then candy canes. Let set.
