Chicken Cordon Bleu Bites

1/2 cup vegetable oil

1 cup unsweetened almond milk

1 cup flour

2 tsp. seasoned salt

1/4 tsp. cayenne

1 tsp. garlic salt

1 cup Panko bread crumbs

2 boneless, skinless chicken breasts, cut into bite-sized pieces

4 slices ham, cut into 1-inch squares

4 slices Swiss cheese, cut into 1-inch squares

2/3 cup mayonnaise

1 Tbsp. Dijon mustard

In a large pan over medium heat, heat oil.

In a medium bowl, add milk. In another medium bowl, combine flour, seasoned salt, cayenne and garlic salt. In a third medium bowl, add bread crumbs.

Dip each chicken piece in milk to coat, then toss in flour mixture. Dip in milk again, then coat with bread crumbs.

Place chicken in oil and cook for 3 to 5 minutes on each side, until cooked through. Remove from pan and top each piece with a slice of cheese, two slices of ham and one more slice of cheese. Put back in pan and heat if you need to melt cheese.

In a small bowl, mix together mayonnaise and mustard. Serve chicken bites with dipping sauce.
