Filling

  • 3oz cream cheese, softened
  • 1/4 cup sugar
  • 1/4 cup canned pumpkin
  • 1 tablespoon all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 egg white

Brownie Batter

  • 1/2 cup butter
  • 2 ounces unsweetened baking chocolate
  • 1/4 cups sugar
  • 1 teaspoon vanilla extract
  • 2 eggs  
  • 1 cup all-purpose flour
  • 1/ teaspoon baking powder
  • 1/teaspoon salt

Directions 

  • Heat oven to 350°F (325°F for dark or nonstick pan). Grease bottom of 9-inch square pan with shortening or cooking spray or line with parchment paper
  •  In small bowl, mix cream cheese and sugar until smooth.
  • Add pumpkin, flour, cinnamon, nutmeg, and egg white; mix until combined completely Set aside.
  • Melt butter and chocolate saucepan over low heat, stirring occasionally until smooth. Remove from heat.
  • Stir in sugar and vanilla. Add 1 egg at a time, mixing well after each addition.
  • Add flour, baking powder and salt;  combine until all ingredients are moistened and mixture is smooth.
  • Split brownie batter in to two 1/2cups
  • Spread ½ cup batter in pan.
  • Spoon pumpkin filling by evenly onto batter, making 3 rows by 3 rows.
  • Spoon about 1 tablespoon of the reserved brownie batter in center of each pumpkin filling
  • To make a swirl, draw knife through mixture in four straight lines horizontally, then vertically for swirled design.
  • Bake 30 to 35 minutes.
  • Cool 30 minutes.
  • Refrigerate at least 1 hour until chilled  

Fudgy vs. Chewy vs. Cakey Brownies…What’s the difference? 

  • Fudgy and chewy brownies use twice as much butter as cakey ones and butter and chocolate are melted together, not creamed like with cakey brownies
  • Chewy brownies uses ¼ cup more flour than fudgy brownies (this recipe is fudgy)
  • Cakey brownies cream together butter sugar and eggs, which is a different method from their fudgy brownie relative.
