Customers lined up in front of the new BIBIBOP Asian Grill in Niles. The chain is gluten-free certified, meaning it's considered a 100% gluten-free restaurant. 

The restaurant allows customers to create their own bowls. Some of the options for the bowls include chicken, beef, tofu, veggies and rice.

Even though nearly two million people deal with celiac disease, an autoimmune disorder that makes it difficult to digest gluten, finding a dining option that's completely gluten free can be a challenge.  

Because all the options are gluten free, some of the customers are willing to travel far just to try the grill.

"About 12 people, they drove 45 minutes from Maryland to Delaware. And they said we are here because this is he only place we all can gather and then be safe," said Eddie Chaib, Director of Operations for BIBIBOP Asian Grill

Eating just one crumb with gluten could make someone with celiac disease sick, meaning certified gluten-free restaurants need to take the proper precautions.

Bailey Arman, Associate Director of Communications at Beyond Celiac says people with celiac disease always need to keep their diet in mind.

"It is morning, noon, and night, snacks. You're constantly thinking is this safe," said Arman.

According to the Celiac Disease Foundation, incidence rates of celiac disease are increasing by an average of 7.5% per year over the past several decades. Even so, these certified gluten-free restaurants can be hard to find.

"People with celiac disease live in the real world. We want to go out to restaurants with our friends. We want to travel. We want to eat with our coworkers," said Marilyn Geller, CEO of the Celiac Disease Foundation.

Certified gluten-free restaurants like BIBIBOP have regular inspection to make sure they are meeting the criteria of a 100% gluten-free restaurant. Chaib said random BIBIBOP locations are inspected on a yearly basis.

The Niles BIBIBOP Asian Grill is the 38th location in Ohio, and the 61st location nationwide.
