Colcannon

Colcannon is a traditional Irish dish, so it's great for serving on St. Patty's Day. Feel free to make your own mashed potatoes instead of prepared.

2 Tbsp. butter

4 cups shredded cabbage

1 onion, chopped

1 (16 oz.) container prepared mashed potatoes, warmed

1 (3 oz.) package cream cheese, softened

1 tsp. salt

1/2 tsp. freshly ground black pepper

Preheat oven to 350º.

In a Dutch oven, sauté cabbage and onion until tender, about 10 minutes. Combine cabbage mixture with potatoes; fold in cream cheese, salt and pepper. Adjust salt and pepper if needed. Stir until cream cheese is melted. Stir into a prepared casserole dish. Bake for 30 to 35 minutes, until heated through.
