Stir It Up: Peach and Blueberry Cobbler

Peach and Blueberry Cobbler

Filling:

8 ripe peaches

2 teaspoons lemon zest

2 tablespoons fresh lemon juice

1/2 cup sugar

1/4 cup flour

1 cup fresh blueberries

Crust:

1 cup flour

1/3 cup sugar

1/4 cup brown sugar

1/4 teaspoon salt

1/4 teaspoon cinnamon

1 stick cold butter

1/4 cup chopped pecans, optional

Garnish:

Ice cream

Preheat the oven to 350 degrees. Peel and slice the peaches. (You can do this quickly by immersing the peaches in boiling water for a minute before putting them in ice water. The skin will just pull off in your hands.) Mix skinned, sliced peaches with lemon zest, lemon juice, sugar, and flour. Mix well than gently add the blue berries and mix gently. Allow the fruit to marinate for about 5 minutes, and then spoon it into 6 ramekins.

Dice the cold butter into cubes. Mix flour, sugar. Brown sugar, salt, pecans and cinnamon in a bowl and cut in butter with a pastry blender until the butter is about the size of peas. With your hands press the flour mixture together and crumble. Sprinkle these crumbles over the top of each filled ramekin. Place ramekins on a baking sheet covered with parchment paper or foil to collect the drips and back in the preheated oven for 40 to 45 minutes. Do not remove form the oven until the top is browned and the juices are bubbly. Serve warm with a small scoop of ice cream.
