Stir It Up: Penne Alfredo

 Penne Alfredo 

12 to 16 ounces dry Penne pasta
3/4 cup butter
3/4 pint heavy cream
1 teaspoon minced garlic 
1/2 cup grated Romano cheese
1/2 cup grated Parmesan cheese
1/2 cup Asiago cheese
lemon juice
pinch of nutmeg
pinch of pepper and taste before adding salt
1 cup lump crab meat, if desired

Cook pasta according to direction on the box.  In a large saucepan, melt the butter and add the cream over low heat.  Add the garlic to the butter cream.  Mix the three cheeses and sift in a little cornstarch.  Mix the cheeses into the butter cream with a squeeze of fresh lemon juice and mix until melted.  Taste and add a pinch of nutmeg and pepper and salt (if needed).  Add the pasta and crab and toss until coated.  Serve immediately.
