No-Bake Coffee Cheesecakes

3/4 cup crushed graham crackers
1 Tbsp. sugar
2 Tbsp. butter, melted
1/8 tsp. salt
1 (8 oz.) package cream cheese, softened 
1/2 cup powdered sugar
1 tsp. vanilla extract
1 instant coffee packet
1 (8 oz.) container whipped topping, thawed
Whipped cream and chocolate sprinkles

In a small bowl, combine graham cracker crumbs, sugar, butter and salt. Divide mixture among four glass jars and press down. 

In a large mixing bowl, beat cream cheese until light and fluffy. Add powdered sugar, vanilla and instant coffee, then blend. With a spatula, carefully fold in whipped topping. Spoon mixture evenly among jars.

Top with whipped cream and sprinkles, then serve.
