We are in the thick of fall and while the sights and smells are all around us, we might as well eat it to.
On 21 News Midday, Chef Capri Cafaro showed us how to make delicious pumpkin cheesecake bars that are sure to make you want more.
Here's what you need.
Crust
- 1 box graham crackers
- 2 tbsp white sugar
- 1 tbsp brown sugar
- 1 stick butter, melted
Cheesecake Mix
- 2 12 oz packages cream cheese, softened
- ¾ cup white sugar
- ¼ cup light or dark brown sugar
- 1 tbsp vanilla extract
- 3 eggs
Pumpkin Cheesecake
- 1 ½ cup prepared cheesecake mix
- 1 can pumpkin puree
- 1 ½ pumpkin spice mix (or mix of cinnamon, nutmeg, allspice and ginger)
Instructions
- Preheat oven to 325 degrees
- Prepare baking dish/pan ( 9x9 size suggested) lined with parchment paper at bottom
- Crush graham crackers in sealed plastic bag or food processor until crackers become fine crumbs
- Mix graham cracker crumbs with melted butter and sugar until fully combined
- Press mixture into bottom of prepared baking dish/pan and set aside
- Combine all ingredients for cheesecake mix with an electric mixer until smooth
- Take 1 ½ cup of cheesecake mix and set aside in a separate bowl
- Add pumpkin puree and spices and combine until pumpkin is fully mixed with cheesecake batter
- Dollop plain and pumpkin cheesecake mixtures over prepared crust, alternating between the two
- Swirl batters together with a knife or small spatula
- Put in oven and bake for 40 minutes
- Cool
