The Antones Salad
1-bag romaine lettuce
1 bag iceberg lettuce
1/2c-Romano cheese
1-c shredded mozzarella cheese
1-cup diced Genoa salami
1-c drained white tuna fish
Mix all ingredients together in a sald bowl.
For the Dressing...
1-c olive oil
1-c red wine vinegar
1/4c- Romano cheese
Salt
Peppers
1t-oregano
Mix all together very well. Toss with the Antone's Salad. Enjoy our family favorite.
Veal Antone's
1-pound veal scaloppini
2-red bell peppers sliced
1-large onion chopped
2-c shredded mozzarella cheese
2-cups sliced mushrooms
1/2#- butter
1-c sherry wine
Salt
Pepper
4-cloves garlic (smashed)
1/4c- olive oil
Begin by adding olive oil, garlic and butter to a pan. Brown garlic slightly. Add peppers, onions and mushrooms. Sauté until tender. Add sherry wine and continue to stir for 5 minutes.
Dredge veal cutlets into flour and sauté in olive oil until golden brown.
Place veal in an oven safe dish. Top with peppers, onions, and mushrooms. Add the sauce from the vegetable sauté over top. Top with mozzarella cheese. Bake on 450 f for 5-8 minutes or until cheese begins to brown.
