Quesadilla Casserole
You can even double this one and have one for dinner tonight and put one in the freezer for later.
1 lb. ground beef
1 onions, chopped
2 tsp. chili powder
1 tsp. ground cumin
1/4 tsp. oregano
1/2 tsp. garlic powder
1/8 tsp. cayenne pepper
1 (15 oz.) can tomato sauce
1 (15 oz.) can black beans, drained and rinsed
1 (8.75 oz.) can whole kernel corn, undrained
1 (4.5 oz.) can chopped green chilies
6 (8-inch) corn tortillas
2 cups shredded Cheddar cheese
Brown beef and onion in a large skillet on medium-high. Add tomato sauce, beans, corn and green chilies; mix well. Stir in all spices except red pepper. Bring to a boil, reduce heat low and simmer 5 minutes. Add red pepper to taste if desired.
Spread 1/2 cup the beef mixture on bottom of 9 x 13-inch pan coated in nonstick cooking spray. Top with 3 tortillas, overlapping as needed. Layer with half the remaining beef mixture and half the cheese. Repeat with remaining tortillas, beef and cheese. Double wrap with heavy duty foil.
Cooking Instructions: Thaw and bake, uncovered, at 350º for 15 to 20 minutes or until heated through. Let stand
5 minutes before serving.
