Soy-Glazed Fish with Sautéed Summer Squash
2 Tbsp. brown sugar
1 Tbsp. soy sauce
2 tsp. grated fresh ginger
3 cloves garlic, minced and divided
4 (6 oz.) pieces cod or halibut
2 Tbsp. plus 2 tsp. canola oil
3/4 tsp. salt, divided
1/4 tsp. freshly ground black pepper
1 1/2 lbs. (about 4 total) small zucchini and summer squash, thinly sliced
1/4 tsp. crushed red pepper flakes
1/4 cup chopped fresh mint
Heat broiler. In a small bowl, combine brown sugar, soy sauce, ginger and 1 clove garlic; set aside. Place the fish on a foil-lined baking sheet. Drizzle with 1 tsp. oil and season with 1/4 tsp. of salt and pepper. Broil the fish 5 to 7 minutes until it's opaque throughout. Baste with soy mixture twice during the last 2 minutes of cooking.
Meanwhile, heat the remaining 2 Tbsp. of oil over medium-high heat. Add zucchini and squash, remaining garlic, crushed red pepper and 1/2 tsp. salt. Cook 5 to 7 minutes, fold in the mint and serve with fish.
