Cod with White Wine Tomato Sauce

4 Tbsp. olive oil, divided

4 cloves garlic, minced

1 pint cherry tomatoes, halved

1/4 cup dry white wine

1/2 tsp. red pepper flakes

1/4 cup chopped basil

2 Tbsp. lemon juice

1/2 tsp. lemon zest

1 tsp. salt, divided

1/2 tsp. freshly ground black pepper, divided

4 (6 oz.) filets cod

In a large pan over medium heat, add 2 tablespoons olive oil and garlic. Cook about 1 minute, until fragrant. Add tomatoes and cook until blistering, about 10 minutes. Stir in white wine and red pepper flakes and let simmer. Add basil, lemon juice, lemon zest, 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook for 2 minutes. Transfer sauce to a bowl and set aside.

Heat remaining 2 tablespoons oil in same pan over medium heat. Season both sides of cod with remaining salt and pepper. Add cod to pan and cook about 5 minutes per side. Serve with reserved sauce.
