If you want to celebrate Saint Patrick's Day and beer or corned beef sandwiches aren't your thing, or you just have a sweet tooth, Capri Cafaro has a recipe that can get you into the Saint Patrick's Day spirit.

Below is the recipe for Capri's Lucky Grasshopper Mini Pies:

Ingredients

- 2 cups chocolate sandwich cookies

- 6 tbsp butter, melted

- ½ bag mini marshmallows

- ½ cup heavy cream

- 1/3 tsp crème de menthe extract (can substitute peppermint extract, or real crème de menthe) (can add more for a stronger mint flavor)

- 2 cups whipped cream or store bought whipped topping

- 2 cups heavy cream

- 3 tbsp powdered sugar

- 1 tsp vabilla

- Green food coloring

- Cookie crumbs or chopped mint chocolates for garnish

Directions

- Crush cookies in food processor or plastic zip bag

- Combine cookie crumbs with melted butter

- Grease mini pie pans or muffin tin with butter or cooking spray

- Press cookie crumb mix into pie pans/muffin tin, working the mix on to the sides of the pan or muffin tin cavities

- Refrigerate prepared pans to allow crust to set

- Melt marshmallows and heavy cream over medium heat until marshmallows fully melted, set aside to cool

- Add whipped cream incrementally to marshmallow mixture until smooth (at least one cup)

- Add food coloring to marshmallow and cream mix to get desired pigmentation

- Spoon mixture into prepared pie pans/muffin tin

- Top with whipped cream and sprinkle with cookie crumbs and/or chopped mint chocolate
