No Bake Peanut Butter Granola Bars

Ingredients

  • 1 ½ cups rolled oats (not instant)
  • ¼ cup chia seeds
  • ¼ cup quinoa
  • 1 cup peanut butter (creamy preferred)
  • 1 cup honey
  • 1 tsp vanilla
  • 1 tbsp brown sugar
  • ½ cup dried cherries
  • ½ cup dark chocolate chips

Instructions

  • Line baking dish (8x8 preferred) or tin with parchment paper greased with a dash of cooking spray to prevent granola mix from sticking
  • Combine oats, chia seeds in quinoa in large bowl
  • Mix peanut butter, honey, and brown sugar over medium heat until the ingredients are combined and in more liquid form that would be easy to pour
  • Pour peanut butter mix over dry ingredients in bowl. Combine until evenly coated.
  • Mix in dried cherries
  • Let mix cool before adding in chocolate chips so chips do not melt
  • Press mixture into prepared dish/tin
  • Refrigerate to set
  • Cut and serve
